Multiple installations, shared database

We have need to have a single installation of FogBugz on multiple web servers (development, staging, production), each of which need to share the same back-end database of bugz.

Do we need to be concerned with background processes, such as the email ingress or bug status processing (closed, spam, etc), running in multiple locations?  Would it be a workable solution to configure just one of the installations to be the show-runner, leaving the others to serve up the web interfaces?

If they are all running off the same DATA, not just the same database, then yes, you'll only want one running the service (fog creek dispatcho).

You can stop the service on the other machines and go into the accessories folder and type "dispatcho.exe uninstall" to remove the service (the service control panel CANNOT be open when you do this).

Yes, your proviso is correct: this is the same DATA, residing in the same database.  I had forgotten that it is possible to run the same data in multiple databases (same answer), and multiple data in the same database.
