Wiki Doc Management System

Hello,

I'm looking for a way to manage internal process documentation and have thought about using a Wiki. We need version control, access control, and ability to print as PDF the contents of any page (or the whole wiki--that would be cool).

Which Wiki is the most stable/continues to be developed?

Which one offers these features?

I've had good experience with PHPWiki.

The whole wiki thing is philosophically opposed to access control.

Are you looking for a system that will be the documentation itself, or a place to store documents? The two concepts have very different answers.
