"Archiving" Projects

We have a number of projects that we are tracking in FogBugz that are coming to a close. We don't want to delete the projects because we'd like the record when we enhance or upgrade the application in the future; yet, we don't need to see the project cluttering up the active project list.

I would appreciate any advice on "archiving" old projects.

Yup, just hit delete :)
FogBugz won't actually delete the project.  The cases will still be there and you can filter for them and they'll show up.

You can even undelete the project later if you want by setting the fDeleted flag to 0 in the database (cannot do this in the UI).

FogBugz actually never deletes anything.  We always keep things around in a "deleted" state.

Is there some way to hide them from the project summary list or project drop-down list?

Yes there is. Once you "delete" the project they will be hidden from those lists.
